This wine is traditionally made with a minimum of 6 years of aging.
Finca “Las Negras”, sandy clay hills at 830 m. Vines over 40 years old and 2,600 plants/ha. High-altitude terroir that favors slow ripening and finesse.
Vase-shaped training system, no irrigation. Fertilization with sheep manure. Selection of plots with a yield of 2,000 kg/ha for maximum concentration and balance.
First week of October. Hand-harvested in 14 kg boxes to preserve the integrity and freshness of the grapes from the vineyard to the winery.
Native yeasts; alcoholic and malolactic fermentation in 500L oak barrels. Aged for 36 months in oak from different origins in a cave (12°C, 85% humidity, hand-raised) and 36 months in the bottle. Limited production: 20,000 bottles.
This wine is aged for a minimum of 6 years in barrel and bottle within our centuries-old cellars. The perfect companion for game, lamb, aged cheeses, red meats, and fruit. A memorable wine for its elegance and power.
